Elderly Care in Warren NJ

What You Will Need

  • 4 pounds of top round lamb
  • Wooden skewers
  • 4 or 5 garlic cloves
  • 2 tablespoons of fresh minced rosemary leaves, plus 1/4 of a teaspoon for the sauce
  • 4 pints of cherry tomatoes
  • 4 small red onions
  • Kosher salt
  • 1 cup of olive oil
  • 1/2 of a cup of dry red wine
  • 4 tablespoons of red wine vinegar
  • 1 cup of chicken stock
  • 1/2 of a teaspoon of fresh ground black pepper
  • 2 tablespoons of fresh squeezed lemon juice
  • A charcoal grill with coals
  • A sharp knife
  • A medium bowl
  • A cutting board
  • A medium pot
  • Plastic wrap

 

What to Do

  • Cut the lamb into 1 and 1/2 inch cubes
  • Mince the garlic using the sharp knife
  • In the medium bowl, combine the olive oil with red wine, garlic, rosemary, thyme vinegar and a teaspoon of salt
  • Mix well
  • Add the lamb cubes to the medium bowl
  • Toss well
  • Cover the bowl with plastic wrap
  • Allow to refrigerate either overnight or for up to two days
  • While it is in the refrigerator, toss occasionally
  • Heat the charcoal grill with the coals
  • Make sure that the coals are in 1 tight layer on the grill
  • Cut the red onions into quarters
  • Separate each quarter of onions into 3 or 4 sections
  • Thread the with onion on the skewers, using about 3 or four pieces of lamb for each
  • Season the lamb on both sides with pepper and salt to taste
  • Place 4 or 5 cherry tomatoes onto skewers, threading them through the stem
  • Rub each tomato with olive oil
  • Season the tomatoes with pepper and salt
  • Place the lamb skewers tonto the hot grill
  • Allow to cook, turning 3 times, for between 10 or 15 minutes
  • Around 5 minutes before the lamb is cooked all the way, place the tomato skewers on the grill
  • Sear the tomatoes on the outside, turning once, but make sure they stay firm on the inside
  • Meanwhile, place the medium pot over high heat
  • Add the chicken stock, lemon juice and olive oil to the pot
  • When its brought to a boil, reduce the heat to a simmer
  • Allow to simmer for 5 minutes, at which point it should be reduced about half
  • Add 1/2 of a teaspoon of salt, the rosemary and pepper to taste
  • Plate the skewers and serve the sauce on the side
