While you can go through the process of making the actual traditional corn dogs, this can be a complicated and messy process, and requires deep frying, which likely does not fit in to your nutritional goals for your parents or your children. Instead, try this creative and convenient twist that forgoes the stick and uses baking rather than frying so that you can still enjoy the corn batter and hot dog flavor, but with better nutrition and easier preparation. Encourage your parent and children to do as much of the preparation on their own as possible so that they can enjoy the feeling of accomplishment that comes from preparing a meal for the family.

 

What You Will Need

  • 3 tablespoons of dill pickle relish
  • 8 six inch all beef hot dogs. You can also choose veggie dogs to make this meal vegetarian
  • 3 tablespoons of melted butter
  • 1 cup of buttermilk
  • 2 large eggs
  • 1/2 of a teaspoon of baking soda
  • 1/2 of a teaspoon of fine salt
  • 3 tablespoons of sugar
  • 1/2 of a cup of all-purpose flour
  • 1/2 of a cup of stone ground yellow cornmeal
  • 3 twelve cup mini muffin tins
  • Two bowls
  • A whisk
  • A sharp knife

 

What to Do

  • Trim the ends off the hot dogs and discard
  • Cut the hot dogs into fifths
  • Put aside
  • Preheat the oven to 425 degrees F
  • Place the muffin tins in the oven to heat
  • In one bowl, whisk together the cornmeal, sugar, salt, flour and baking soda
  • In the other whisk together the buttermilk eggs and melted butter
  • When both bowls are well incorporated, mix the wet ingredients into the dry ingredients
  • Remove the hot muffin tins from the oven carefully
  • Fill each cup half full with the batter
  • Place a hot dog in the center of each muffin cup
  • Top with 1/4 of a teaspoon of relish
  • Return the muffin tin to the oven
  • Cook for between 7 and 10 minutes, until golden brown and set
  • Remove from the oven and let cool for 2 minutes
  • Remove from the muffin tins and serve hot
